Banana Muffins w/ Cream Cheese Frosting 🍰🍌😋

Today I will tell you how I baked my banana muffins. The recipe along with directions will be listed at the bottom. During the process of making the batter, I had to improvise a lot. I couldn’t find my potato masher to mash the bananas, so I used my hands and a spoon. But don’t worry, my hands were washed. 😉 

After I put my muffins in the oven @ 350°, I set the timer for 23 minutes, and got started on my icing.

I used a disposable bag and instead of attaching a coupler and tip, I used my scissors and snipped of the corner to the size I wanted. (You can also do this with a ziploc bag)

I scooped my Pillsbury Creamy Supreme Cream Cheese Frosting into the bag and let it chill in the fridge for 12 minutes. 

When my cupcakes were done, I dumped them out of the pan onto my stove top and spread them out about an inch or two away from each other for cooling. 

After ten minutes went by, they were ready for the frosting. I took my bag out of the fridge and did my signature piping.

This recipe is easy for kids too! But they may need a little help depending on their age.

What you’ll need….

2 bowls

Spoon/Spatula

Sifter/Drainer

Ingredients:

1 1/2 cup Flour

3/4 cup Sugar

1/2 tsp Salt

1 Egg

1 tsp Baking Powder

1 tsp Baking Soda

1/3 Butter Melted

3 Bananas Mashed

What to do:

Preheat oven to 350° F (175° C). Coat muffin pans with non stick spray or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside. (Your first bowl)

Combine bananas (mashed), sugar, egg, and melted butter in a large bowl.(2nd bowl) Fold in flour mixture, and mix until smooth. Scoop into muffin pans

Bake in preheated oven. Bake mini muffins for 10-15 minutes, and large muffins for 25 – 30 minutes. Muffins will spring back when lightly tapped.
